The Azienda Agricola Antica Acetaia Cavedoni since 1860
The fertile hilly soil where the vineyard is born and cared for, enjoys some particular privileges: hilly climate ideal for the production of grapes and a good soft soil.
The fine grapes we grow are lambrusco grasparossa di castelvetro, trebbiano nostrano and trebbiano di spagna; all native grapes ideal for the production of Traditional Balsamic Vinegar of Modena DOP and Balsamic Vinegar of Modena IGP.
Marcello Cavedoni, sixth generation of Casa Cavedoni, deals with the processing of these vineyards, from the land to the finished product, which are constantly followed and without the use of herbicides or aggressive phytosanitary products.
Pruning as the harvest takes place through manual methods as in the past and crushing and boiling according to ancient traditions.
The love for the land and the passion for natural and genuine things are the foundations to maintain one of the oldest Acetaie in the Modena area.
